If you start with the basics, a great holiday stuffing or turkey dressing may garner as many raves around the dinner table as the turkey.

Simply start out with fresh ingredients, add your favorite herbs and spices, an egg or two for consistency and - especially when it comes to holiday turkey stuffing - be sure to make plenty of it !

  • Rule of thumb - allow about 3/4 cup of stuffing per pound of turkey. Double that amount and bake extra stuffing on the side in a casserole dish.

  • Avoid the temptation to overstuff around the neck and cavity. Stuffing expands while cooking.

  • Food safety experts advise to stuff the bird immediately before roasting time. Turkey juices may spoil the stuffing, even if refrigerated.

In the U.S., bread and sausage are the ingredients for a typical turkey stuffing, However, up North regional variations may include adding chestnuts, oysters or cranberries, while down South cornbread and pecans -- or Cajun spices and a dash of bourbon! -- traditionally add special flavor and zest.


Basic sausage turkey stuffing recipe

This recipe calls for a roll of breakfast sausage, which has been a Thanksgiving stuffing staple for over half a century. Add some onions and your favorite spices, and the result is a moist and flavorful side dish for your holliday turkey:

Ingredients
1 16 oz breakfast sausage roll
1 14 oz. package cubed stuffing
1 medium onion, diced
1 teaspoon poultry seasoning
2 cups chicken broth
1/2 cup butter, melted

Directions
1. In a large skillet crumble sausage and add add onion. Cook over medium heat unit until sausage is brown and onions are tender.
2. In a large bowl, place cubed stuffing and add cooked sausage mixture. Sprinkle with poultry seasoning. Pour broth and butter over the top and mix until well blended.
3. Spoon stuffing into a 9 x 13 inch baking dish and bake at 350F for 45 minutes. Serves 6-8.

NOTE: if you're planning on adding stuffing to your turkey, make this recipe the night before to let cool in the refrigerator. in the morning, add the chilled stuffing to the turkey before roasting.
