Beth's Strawberry Pie

 

Number of Servings: 4 pies
Prep Time: 2 hours Skill Level: Easy

Ingredients:

About 4 pounds fresh strawberries
4 graham cracker pie crusts
2 cups sugar
2 cups water
4 tablespoons corn starch
2 boxes of strawberry jello
Whipped topping if desired.

Instructions:

1) Clean the strawberries.
2) Cut off the tops, and choose the best for pie. (whole berries, not sliced)
3) Place strawberries carefully and attractively into the graham cracker pie crust.
4) Put 2 cups sugar, 2 cups water, 4 tablespoons corn starch in cooking pan.
5) Bring to boil over medium heat, stirring continually, until thickened.
6) Remove from heat, stir in 2 boxes of strawberry jello.
7) Set aside to cool.
8) Pour glaze mixture over strawberries. (tip: Pour mixture slowly over the strawberries, trying to cover each strawberry. It makes the pie more attractive.)
9) Place pie in Refrigerator to set up better.
10) slice, add cool whip topping if desired, enjoy.

Helpful Hints:

Local grown strawberries make the best pie. You may never go back to packaged glaze. Part of the two hour prep time is just waiting for the glaze to cool. If you put the glaze on too hot, it will make the crust, and berries soggy. Makes 4 pies.
