Ingredients: |
•
one 3-lb chicken
• 1/2 red pepper
• 1/2 green pepper
• 1/2 yellow pepper
•
1 chile pepper, crushed
• 2 garlic cloves, crushed
• 1/2 small onion, thinly
sliced
• 1 teaspoon salt
• 1 teaspoon grated zest of lemon
• 1 cup fine
vegetable oil

Instructions: |
Wash
and dry the chicken.
Halve lengthwise and place in a bowl.
Remove the seeds from
the peppers and the chile, finely dice the flesh, and mix with the other ingredients
in the oil.
Pour over the chicken.
Cover with foil and leave in the refrigerator
to marinate overnight.
Grill on both sides for a total of 40 minutes.
About 10 minutes before done, baste again with marinade.
