Homemade Chicken Soup Recipe

Ingredients:

INGREDIENTS 2 quarts chicken broth 1 quart water 1 medium chicken, roasted 2 medium onions, diced 2 large carrots, peeled and cut 2 large stalks celery, sliced small 1 teaspoon dried parsley 3 tablespoons vegetable or olive oil

Instructions:

1. In a large soup pot, add broth and water and bring to a boil. Lower heat and let simmer. 2. Remove skin & bones from chicken. Reserve the meat and cut into small pieces. 3. Add skin and bones to the broth and cover pot. Let simmer for 25-30 minutes. 4. Discard skin and bones and strain broth through a colander. 5. Return broth to the pot over medium-high heat. 6. Add the reserved meat, onions, carrots, celery and parsley and cook for an additional 20-30 minutes until vegetables are soft.

You can serve this favorite comfort food immediately, or safely refrigerate for a few days. Like most soups, this one tastes best when made ahead, to allow time for the flavors to really blend. For homemade chicken noodle soup, break up pasta strands into small pieces and add with the meat and vegetables at the last stage.
