Vegetable Gazpacho

Ingredients:

3 slices toasted white bread cut into cubes 1/4 cup red wine 4 cloves of minced garlic 7 large tomatoes cut into wedges 3 medium chopped onions 4 cucumbers, peeled and chopped 3 green peppers chopped 1 Tbsp. paprika 5 Tbsp. oil 3 Tbsp. red wine vinegar Juice of 1 lemon Tabasco sauce to taste salt and pepper to taste Croutons Sour Cream

Instructions:

1. Soak bread cubes in red wine until bread soaks it up. 2. Put bread in blender with vegetables and blend. 3. Add the oil 1 Tbsp. at a time. 4. Add vinegar, juice and seasonings and blend a few seconds more. 5. Put soup in refrigerator to chill. 6. Serve cold and top each serving with sour cream and croutons.
