Irish Lamb Stew

Ingredients
|
1 1/2 pounds lamb, cut into pieces
Salt and pepper to taste
4 carrots, sliced
2 potatoes, peeled and cubed
1 large onion, chopped
Parsley, chopped

Instructions:

1. In a large skillet brown lamb on all sides. 2. Cover with water, add salt and pepper to taste, and bring to boil. 3. Cover and simmer over low heat for about 1 1/2 hours. 4. Add carrots, potatoes and onion and cook for another 1/2 hour or until vegetables are tender. Heap up in bowls and garnish with parsley before serving. Served with lots of crusty bread and butter

Helpful Hints:
|
Add to this traditional recipe by combing a bit of minced garlic and thyme with the vegetables. You may also want to thicken the stew (near the end, while everything is still hot and bubbly) by stirring in little flour dissolved in water.
