Cream of Asparagus Soup |

Ingredients |
4 tablespoons vegetable oil
1 small onion, chopped
4 (10 oz.) packages frozen cut asparagus
2 cups chicken broth
8 egg yolks, beaten
5 cups milk
2 teaspoons salt
1/2 teaspoon pepper

Instructions: |
1. In medium saucepan heat vegetable oil and onion and cook until tender.
2. Add chicken broth and asparagus and and cook until asparagus is tender.
3. Puree ingredients in blender until smooth.
4. Whisk in egg yolks.
5. Return mixture to saucepan and stir in milk, salt & pepper.
